As the Executive Chef for Dunkin’ Donuts, I enjoy visiting our restaurants around the world and hearing feedback directly from our franchisees and guests. In my recent travels, I was asked about the inspiration behind the Big N’ Toasted Breakfast Sandwich, our most successful limited time offer ever.
When developing the Big N’ Toasted Breakfast Sandwich, my team and I were inspired by the old-fashioned diner meals we ate growing up. I like to think of the Big N’ Toasted Breakfast Sandwich as ‘retro-reinvented,’ because we took nostalgic flavors – bacon, eggs, buttered toast - and incorporated them in a hearty breakfast sandwich that’s perfect to keep our busy Dunkin’ Donuts guests running.
Once we had the vision, our next task was to cook up the recipe for a hearty, yet flavorful breakfast sandwich. Up until the Big N’ Toasted Breakfast Sandwich, Dunkin’ Donuts had never launched a sandwich before with Texas toast. We’ve always thought that our guests would also enjoy a breakfast sandwich on Texas toast, especially if we spread a thin layer of butter on the inside of the bread and griddled it, resulting in buttery, yet crispy outer layer.
In order to build a sandwich on thick Texas toast, we knew that the interior of the sandwich needed to be filled with big, bold flavors. We looked for breakfast sandwich components that would taste great in between buttered Texas toast, and found the right combination: two peppered fried eggs, paired with four crispy slices of cherrywood smoked bacon and a creamy slice of American cheese.
All in all, I couldn’t be more pleased with the end result. I always know that we’re on to something when my team of chefs go crazy for a new product, but what really stands out to me is when I hear positive feedback from our franchisees and guests.
